Banana Oat Blender Pancakes
These are my weekend go to for Beckett. They are SO EASY and he LOVES them. Plus, they are super healthy, easy to make a double batch, and can be frozen for later use.
Recipe adapted from Ambitious Kitchen
Yield: 8 pancakes (about 2 servings depending on how hungry your kiddo is)
Cook time: 5 minutes
Ingredients
2 ripe bananas
2 eggs (or flax eggs)
1 1/2 cups rolled oats
2 tsp baking powder
1/2 tsp cinnamon
pinch of salt (you can add 1/2 tsp if your kiddo is older)
1/2 tsp vanilla
optional* 1 tbsp peanut or other nut butter
Directions
Place all ingredients in a blender and blend on medium-high speed for about 30-45 seconds.
Heat a little bit of oil or butter in a pan (I like to use my cast iron for these pancakes) on medium heat. Pour in pancake batter, about 1/2 cup or so, and cook until bubbles form and pop and they are golden brown on the bottom. Flip and cook until golden brown, about another 2 minutes.
Serve as is, maybe with some butter or nut butter on top. Or serve with maple syrup if your kiddo is older!
