Carrot Raisin Muffins
These muffins are easy to make and offer a healthy breakfast or snack on the go for the littles.
Yield: 10 muffins
Bake time: 25 minutes
Ingredients
3/4 cup whole wheat flour
1/2 cup rolled oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla
2 eggs
3 tbsp oil (canola, safflower, melted coconut)
1/4 cup brown sugar
3 carrots, grated (I like finely grated)
1/3 cup raisins
Directions
Preheat oven to 350°F.
In a medium bowl mix together flour, oats, baking powder, and baking soda.
Make a well in the middle and add the eggs, oil, vanilla, and brown sugar. Mix together then incorporate the dry ingredients. Stir until just combined.
Stir in grated carrots and raisins.
Spoon into lined muffin cups - about 2/3 full. Bake at 350°F for 20-25 minutes or until golden brown and a toothpick inserted in the middle comes out clean. Let sit about 5 minutes in the pan then remove to cool on a wire rack.
