Spiced Seed Balls
I love making these for my son to take to preschool or just as a healthier snack option at home or on the go.
Time: 15 minutes
Yield: 18 1” balls
Ingredients
1 cup oats
1 cup mixed seeds - flax, chia, sesame, sunflower, pepita**
2 T maple syrup
1/2 cup raisins
8 dates, pits removed
1/2 t vanilla
1/2 t ground cinnamon
1/2 t ground ginger
1/4 t ground nutmeg
1/4 t ground cloves
Directions
Add oats and seeds to a food processor and pulse until very small and fine. It’s okay to have some larger seed pieces still.
Add in remainder of ingredients and pulse until combined and you are able to bring the mixture together into a ball. It will appear dry at first but after a bit of working should roll together and hold the shape. If needed, add either a bit more raisins/dates or maple syrup. Store in a container in the fridge for up to 2 weeks.
Note: instead of 1 cup of seeds, feel free to use nuts or any sort of combination.
